I'm editing right now using a LaCie 500 gig 5400 rpm drive, and a single NTSC DV stream runs fine. Since I never have to output to tape, but just take my finished edit and make a bunch of Quicktimes out of it, I don't care that much about real-time playback.
But if you need to go out to tape, or be assured of smooth, glitch-free playback over the entire sequence, 7200 rpm is where you oughta be.
